A meal that is sure to make your loved ones happy!
Baked Sweet Potatoes with Maple Butter Injection Sweet potatoes are delicious when baked especially over hot charcoal. The skin gets crisp and the flesh is tender with a hint of smokiness. Take it one step further and inject those tender grill baked potatoes with a mixture of maple syrup and melted butter!
Special Equipment: Injection syringe. An injection syringe is a fast and easy way to impart flavor and juiciness by injecting marinades and other liquid flavorings into a variety of foods!
Fire up your grill. Place the potatoes onto your grill and close lid. Grill/bake sweet potatoes for 45 to 60 minutes or until they are tender when pierced with a knife. While the potatoes are baking, prepare the butter. Combine the butter and maple syrup into a small sauce pot and heat until the butter is melted. Season to taste with a little salt. Stir and set aside, keeping warm. When the potatoes are baked and tender, suck up the warm butter maple syrup mixture with your injection syringe. Plunge the needle into the center of the hot potato and press the plunger on the syringe, injecting the warm butter mixture into the center. Repeat with remaining potatoes. Cut open each potato and watch the hot buttery steam rise from the hot flesh.
Serve immediately with Tony Roma’s St. Louis Ribs and Red Cabbage Slaw.
